Here is my killer lemon coconut fat bomb recipe.
In light of recent studies of the benefits of coconut oil, my family has become pretty obsessed with fat bomb recipes. The weight loss benefit was particularly intriguing to me as I have been trying to live a healthy and fit lifestyle. My favorite benefit, however, is the mental acuity I gain from eating fat bombs when I'm in a work slump. Lemon and honey also have many health benefits, so this recipe is a win-win-win!
I like to make this is large batches so I only have to go through this process ever couple of months. I buy my coconut oil from Costco, since they have a large tub at a reasonable price. Our honey comes from my father-in-law's bee farm, which is delicious. I would recommend finding your own locally sourced honey. I get the lemon juice pre-squeezed from Whole Foods. You are welcome to use fresh lemons as well, but I don't notice much of a difference in taste despite all the extra work.
Here is the recipe:
1 cup coconut oil (refined or unrefined)
1/4 cup lemon juice
3 tablespoons honey
Put all the ingredients into a food processor and blend until it looks like a paste. (It should not be liquid!) Put into trays and freeze. After a couple of hours, you can remove them from the trays and into a container which will be kept in the freezer.
