I take my snack lifestyle seriously because I’m always on the go. There are many days where I’m away from my home and fully scheduled for 12-16 hours. (Ugh I know)
Needless to say… without snacks… I’d be dead.
This is my recipe for roasted chickpeas. It’s stupid simple, and you can make them in bulk… and keep them in your purse! Hooray!
One can of chickpeas drained (save 2 tablespoons of the liquid if you want to go oil free).
1.5 Tbsp of grapeseed oil (or oil of your preference).
2 cloves of fresh pressed garlic.
Your favorite spice blend (I prefer blends that have spice and citrus).
Add the grapeseed oil and garlic to a pan on medium heat. Cook the garlic just long enough for it to start roasting and turning brown.
Add in your chickpeas and turn up the stove to medium-high and stir or shake the pain as they roast. They should crisp up in about 5-8 mins.
Just before they reach the desired roast you prefer, add spice blend to the pan, toss together, and cook for one final minute.
Eat them when they are warm or wait till they cool to store in a glass container and eat throughout the week!
Chickpeas are full of protein, inexpensive (especially if you buy them in bulk) and are a truly fabulous snack.
